En el libro de referencia decidimos no incluir el aceite de coco, por que en el se conjugan factores muy espec�ficos relacionados con su original perfil lip�dico, en el que predominan �cidos grasos saturados de cadena media, muy diferente al de los dem�s aceites comunes, en que prevalecen los �cidos grasos de cadena superior a 14 �tomos de carbono. El aceite de coco no resulta un producto com�n en los supermercados y establecimientos minoristas, y no abunda tanto como los dem�s aceites estudiados, aunque anualmente se producen m�s de 3,5 MTM en el mundo, preferentemente en pa�ses con clima tropical y la mayor parte de ellos con una econom�a emergente o en desarrollo. Paralelamente, �ste ha tomado inter�s en los medios de comunicaci�n y de divulgaci�n cient�fica, incluyendo los relacionados con la red, atendiendo a un grupo de propiedades farmacol�gicas que se le atribuyen, incluyendo su posible efecto sobre enfermedades cerebrales como la epilepsia y el alzheimer, para las que por su complejidad, hasta ahora no existen tratamientos eficaces. A pesar de lo anterior, por su perfil lip�dico rico en �cidos grasos saturados, aunque de cadena media, no puede inducirse que el aceite de coco no est� asociado con las enfermedades cardiovasculares, aunque en este sentido aparecen defensores y detractores. Tambi�n, atendiendo a que los �cidos de cadena media son m�s f�ciles de metabolizar por el organismo, hay quienes defienden que la energ�a asociada a los mismos se consume con rapidez, evit�ndose o disminuyendo, el almacenamiento de los mismos en el tejido adiposo, y por consiguiente jugando un rol positivo en la lucha contra la obesidad, conjugado con una dieta adecuada. Es interesante valorar, como se recoge en la monograf�a, la existencia de un numeroso grupo de palmeras aceiteras con frutos de cuyas semillas se pueden obtener aceites con un perfil lip�dico muy semejante al del aceite de coco. Dentro de �stas palmeras se valoran un grupo representativo de las mismas, pero existen muchas m�s, algunas de las cuales no se han estudiado pues crecen en las regiones selv�ticas de los pa�ses tropicales, pero cuya utilizaci�n podr�a redundar positivamente en las econom�as emergentes de estos pa�ses. Pero en esencia, en la monograf�a se defiende el fundamento b�sico de que el aceite de coco es un aceite vegetal comestible y que como tal ha de verse, independientemente de sus posibles efectos farmacol�gicos en los que se precisa profundizar m�s antes de establecer conclusiones definitivas, pero al margen de esto, este aceite presenta m�ltiples aplicaciones, no solo en el sector alimentario, sino tambi�n en el industrial, muy relacionado con la cosm�tica y la jaboner�a, en que se obtienen excelentes prototipos de gran acci�n detergente y espumante.
